Name: JasminSubject: Re: in need of a chicken salad recipe ... Chicken salad has such a wide range of ingredients that I never use a recipe. I just throw together whatever suits my fancy. Basically you start with diced or shredded cooked chicken, add a chopped egg or two, chop up a rib or two of celery and add enough mayonaise to hold it all together. That's all you need for plain chicken salad. Sometimes I add shredded cheese. One of my favorite lunch places adds a little tarragon and green onion. The deli at my supermarket adds grapes and chopped pecans. A friend on mine uses chopped bean sprouts instead of celery, omits the egg and adds a little soy sauce to the mayo.(I think chopped water chestnuts would work too.) When I was growing up my mother made hot chicken salad sandwiches by using the basic recipe on half a hamburger bun, laying a slice of cheesse on top and broiling them until the cheese melted. Sometime we'd put the other half of the bun on and eat it as a sandwich, other times we's leave it open faced and use a fork. So use your imagination and add whatever you like.
